Recipe: Banana Apple Waffles With Sunflower Maple Syrup

Are you looking for a delicious breakfast you AND your kids will fall in love with? You will never know that these waffles are gluten free, grain free, and dairy free. Not only are they allergy friendly, they are packed with nutrition, and even the syrup is loaded with fatty acid goodness. Raw, organic sunflower seeds are the highest food source of Linoleic Acid - one of our most important EFA's and vital to our mitochondrial health.

Waffle Ingredients

10 bananas

1/2 cup organic apple sauce

1 can natural value full fat coconut milk

1/2 tsp sea salt

2 Tbsp vanilla

1 tsp baking soda

12 pastured eggs

2 1/2 -3 cups Ottos cassava flour 

3 Tbsp coconut oil for waffle iron

Directions 

Yield 10-12 waffles

  1. Add bananas, coconut milk, apple sauce, eggs, and vanilla to your food processor.
  2. Add cassava flour, baking soda, and sea salt. Process until smooth.
  3. Heat your waffle iron - once your waffle iron is hot, drizzle with coconut oil and scoop your waffle batter onto the waffle iron.
  4. Top with sunflower maple syrup and enjoy!

Sunflower Maple Syrup Ingredients

1/2 cup sunflower seeds, soaked overnight and rinsed

1 cup pure maple syrup

2 Tbsp E-Lyte

1 Tbsp vanilla

Directions

Combine sunflower seeds, maple syrup, E-lyte, and vanilla into a high powered blender. Blend until completely smooth.
